GOURMET POPCORN
- Try making your own gourmet popcorn right in your own kitchen!
- Be sure to ask a grown-up to help you melt the butter
or margarine and to take the baking dish in and out of the oven.
- Pour popped popcorn into a large baking dish.
Add 1 cup dry roasted peanuts and 1/3 cup shredded coconut.
Don't stir yet.
- Measure 2 tablespoons butter or margarine into small saucepan.
Melt butter and add 1/4 cup honey. Stir.
- Drizzle butter-honey mixture over popcorn mixture. (Use a rubber scraper, if you have one).
- Put baking dish in oven at 300F. Bake for 20 minutes.
Stir occasionally with rubber scraper, or wooden spoon.
- Carefully remove dish from oven using kitchen mitts. Cool and enjoy!
- OPTION: While popcorn mixture is in the oven, prepare 3/4 cup dried apricots
and/or 3/4 cup peanuts or raisins. Stir these into the popcorn after cooling
popcorn slightly and turning with a pancake turner.
- Pour all into a big bowl and serve.
OVEN-FRIED PARMESAN CHICKEN
- Here's an easy main dish chicken recipe. Most of the preparation can be
handled by young chefs, but some adult supervision and help may be needed.
- WASH AND DRY
Wash and pat dry 1 cut up frying chicken.
(This recipe is especially good using skinless chicken pieces, but either will do).
MIX IN SHALLOW BOWL
- In a shallow bowl mix 1/2 cup grated Parmesan cheese, 1/2 cup wheat germ,
1 teaspoon dried rosemary, 1/2 teaspoon salt and 1/2 teaspoon pepper.
- Adult help may be needed: melt 3 tablespoons margarine or butter in saucepan.
Press 1 large clove garlic through garlic press (or use bottled garlic),
add to butter and cook for 1 minute over medium heat. Pour in 1/4 cup milk. Remove pan from heat.
- DIP, ROLL, AND BAKE
Dip chicken pieces in margarine mixture, then roll in cheese mixture to coat chicken well.
Place on lightly greased baking sheet d bake in preheated 325 oven for about one hour.
