1.  FRUIT 'N TUNA PITA 

INGREDIENTS

one small can tuna, drained
1 small apple, sliced or cut into bite-size pieces
Small can of pineapple tidbits, well drained
Crushed potato chips (about 1 cup)

Mayonnaise, 1/2 cup
Handful of raisins
Pinch of cinnamon
Chopped walnuts, 2 Tablespoons

Mini pita breads

MATERIALS/UTENSILS

medium bowl
measuring cup
mixing spoon
small bowl
measuring spoons
rubber spatula
sharp knife

I. Combine the first 4 ingredients in the medium bowl. Stir

2. Combine the next 4 ingredients in the small bowl. Mix. Fold the salad dressing mixture into the chicken mixture until coated.

3. Carefully slit each pit bread open at one end. Fill each pit with mixture.

2.  SALAD SANDWICHES



INGREDIENTS

Medium tomato
Grated carrot
Green onion, thinly sliced
Half a green, yellow or red pepper, sliced
Grated Cheddar cheese, 1 cup
4 small lettuce leave, washed and dried
Creamy dressing, 2 Tablespoons
Shredded iceberg lettuce, 1 cup
2 white or whole wheat flour tortillas

MATERIALS/UTENSILS

cutting board
sharp knife
paper towel
medium bowl
measuring cups
mixing spoon
measuring spoons
paper towels

1. Cut the tomato in half on the cutting board. Gently squeeze over the paper towel to remove the seeds. Discard the seeds and juice. Dice the tomato into chunks.

2. Combine the tomato with the carrot, green onion, pepper and cheese in the bowl. Stir.  Add the dressing and toss the mixture together

3.  Place 2 lettuce leaves in middle of each tortilla. Leave some tortilla uncovered at one end to fold up envelope-style. Spread some of the Vegas mixture over the lettuce. Fold the bottom of the tortilla up and then fold each side in. Leave the top open. Wrap in the paper towels to eat. Makes 2 sandwiches.

You can't get any easier than this. Have paper napkins handy

3.  HOT DOG HEAVEN!



INGREDIENTS
2 hot dogs
2 tbs. (15 ml) jelly (grape, apple or red currant jelly)
1 tbs. (I5 ml) chili sauce or ketchup

UTENSILS/MATERIALS
cutting board
sharp knife
shallow microwave-safe bowl
measuring spoons
mixing spoon
microwave oven
oven mitts
hot pad
toothpicks

1. Cut each wiener into 6 or 7 pieces. Place all the pieces in the bowl.

2. Spoon the jelly and the chili sauce over the wiener slices. Stir to coat.

3. Microwave on high (100%) for 2 minutes. Stir. Use the oven mitts to remove the bowl to the hot pad.

4. Serve with the toothpicks to eat this snack. Serves 2 or 3.

4.  PIZZA PETITE



INGREDIENTS

English muffin
Pizza sauce
Shredded Cheddar or Mozzarella cheese

UTENSILS/MATERIALS
Sharp knife
Cutting board
Toaster
Cookie sheet
Measuring spoons
Potholders
Pancake turner
Plate

Toast muffin halves on medium toaster setting. Put toasted halves on cookie sheet.

Top each muffin half with:
1 tablespoon pizza sauce
1 tablespoon shredded cheese
Bake in overt about 5 minutes o~ until cheese is melted.

Use pancake turner to place on plate.

TO MICROWAVE: Toast English muffin halves, top with pizza sauce and cheese as directed above.

HINT: Don't stop there!  You might also try adding some sliced olives, crumbled cooked hamburger, chopped tomato, sliced pepperoni or another favorite toppings before putting cheese on muffin half.

Put a microwavable paper towel on microwavable plate. Place muffin halves on the paper towel. Microwave uncovered on high (100%) 30 to 45 seconds or until cheese is melted.

Cool slightly before eating.

5.  PICKLE POWER WRAP SNACK!



INGREDIENTS

Large dill or sweet pickle
Soft cream cheese
Ham slice

UTENSILS/MATERIALS

Paper towel
Measuring spoons
Table knife for spreading
Sharp knife for cutting
Cutting board

1.  Pat dry with paper towel one large pickle (about 4 inches long)

2.  Spread 1 Tablespoon soft cream cheese on your slice of ham

3.  Place pickle on ham slice, then wrap ham around pickle.

4.  Eat as is or cut wrapped pickle into sections.

6.  NACHOS
 

INGREDIENTS

Round tortilla chips
Salsa
Shredded cheese

UTENSILS/MATERIALS
Microwavable plate
Spoon
Cheese shredder
Potholders
Microwave

TO MICROWAVE METHOD FOR 1 SERVING:

Arrange 6 tortilla chips in a circle on a microwavable plate.  Spoon a small amount of salsa on each chip.  Sprinkle shredded cheese on top. Microwave uncovered on high (100%) 20-30 seconds or until the cheese is melted.

7.  BANANA BOATS
 

INGREDIENTS
1 Medium banana
Fruit flavored soft-style cream cheese
Granola
Processed cheese slice
Peanut butter

UTENSILS/MATERIALS

Table knife
Cutting board
Toothpicks
Plate

1.  Cut banana in half.

2 . Spread 1 cut side with cream cheese.

3.  Press granola into the cheese.

4.  Top with the other banana half.

5.  Cut filled banana in half crosswise.

6.  Cut cheese slice into sail shape.

7.  Attach cheese "sail" to banana boat using toothpick

8.  Make another boat using peanut butter filling!

8.  GRAPEFRUIT SQUEEZIES!
 

INGREDIENTS

1. 4 grapefruit
1 cup lemonade
1 cup nonfat frozen lemon yogurt
1 cup sugar-free lemon-lime soda

UTENSILS/MATERIALS

Blender
Strainer
Bowl
4 fancy straws
Knife
Spoon

1.  Make hole in top of each grapefruit and hollow out the insides.
2.  Strain juice and discard pulp.
3.  Combine the strained grapefruit juice, lemonade, frozen yogurt, and soda in blender.
4.  Whirl until smooth.
5.  Pour liquid into hollow grapefruit.  Serve with a straw sticking out of the hole.

9.  HEDGE HOG PARTY SNACK



INGREDIENTS

Small head of cabbage or lettuce
Low-fat ranch dressing or low-fat fruit yogurt
Assorted fruits and veggies such as:
cherry tomatoes
seedless grapes
pineapple chunks
strawberries
olives
pepper chunks
carrot rounds
celery slices
zucchini rounds

INGREDIENTS/MATERIALS
Large plate
Coloured toothpicks
Small bowls, one for each dip

1.  To make a foundation for the Hedge Hog, slice bottom off cabbage to create a flat surface.  This is the Hedge Hog's body!  Set this on large plate, flat side down.

2.  Stick toothpicks all over the cabbage to form "quills" for the Hedge Hog.
3.  Stick small pieces of fruits and veggies onto the quills, enough to cover the whole hog.
4.  Set out bowls of dip
5.  Snackers can pull the quills from the Hedge Hog, dip, and eat the goodies on each quill.

10.  PEANUT BUTTER CRITTERS



INGREDIENTS
8 slices whole-wheat bread
1/2 cup low-sugar, low-fat peanut butter
16 raisins
A few twisted pretzels
4 maraschino cherries

UTENSILS/MATERIALS
Knife
4 plates

1.  Spread 4 slices of bread with peanut butter and top each with another slice of bread to made a sandwich.

2.  Cut each sandwich into 4 triangles.

3.  Set 4 triangles on each plate (the triangles form the critter's faces, so leave some room between them).

4.  Stick 2 raisins near the top (wide) section to make eyes.

5.  Use half a cherry for the nose.

6.  Break twisted pretzels in half and stick into proper place to make antler shapes for reindeer critters, then improvise other types of ear shapes from celery, carrots, fresh parsley, etc. to create other critters!

11.  DRINK THE PINK!



INGREDIENTS

1 cups low-fat vanilla or strawberry yogurt
1/2 cup frozen strawberries
1 cup low-fat milk
4 cherries

UTENSILS/MATERIALS

Blender
4 glasses

1.  Combine the yogurt, strawberries, and milk in blender.
2. Whirl until smooth
3.  Pour into four glasses
4.  Add cherry to each glass and serve.

12.  CONE FULL 'O FRUIT!



INGREDIENTS

Large ice-cream cone
Fruit
Honey and/or chocolate syrup
Granola

UTENSILS/MATERIALS

Sharp knife
Cutting board
Measuring cups
Measuring spoons

1.  Place in ice-cream cone about 3/4 cup cut-up fruit.  Fill cone to the rim.
You might use:
strawberries
bananas
apples
blueberries
pears
peaches
grapes

2.  Drizzle fruit with 1 teaspoon honey or chocolate syrup.

3.  Sprinkle with 1 teaspoon granola.

13.  FRUIT LEATHER



INGREDIENTS

Strawberries
Honey or corn syrup

UTENSILS/MATERIALS

Jelly roll pan (15 1/2 x 10 1/2 x 1 inch)
Plastic wrap
Blender
Sharp knife
Cutting board
Measuring cup
Measuring spoons
Rubber scraper
Potholders

1.  Cut up strawberries to make 1 cup.
2.  Place strawberries in blender
3.  Add 2 teaspoons honey or corn syrup.
4.  Cover and blend about 10 seconds or until smooth.
5.  Spread mixture evenly over jelly roll pan which has been lined with plastic wrap.
6.  Bake in oven for about 3 hours at 140.
7.  Cool and roll in plastic wrap to store.

14.  TRAIL MIX



2 cups peanuts
3 cups mini pretzels
1 cup Wheat Chex cereal
1 cup Corn Chex cereal
1 cup almonds
2 cups ale nuts
2 cups sesame sticks
1 teaspoon garlic powder
1 teaspoon peanut oil

Mix all ingredients in a large mixing bowl.  Store in an airtight container.

15.  BANANA HOT SHOT!



INGREDIENTS
Banana, unpeeled
Handful of chocolate chips
Handful of miniature marshmallows
Some chopped walnuts or peanuts

UTENSILS/MATERIALS
Knife
Cutting board
Microwavable plate
Microwave
Potholders

1.  On cutting board, cut the banana down the center lengthwise through the skin being careful not to cut through to the other side.

2.  Spread the banana open slightly.  Lay on the plate, cut side up.

3.  Sprinkle chocolate chips (about 1 Tablespoon) and marshmallows (about 1/4 cup) inside the banana.

4.  Microwave on high (100%) for 1 minute 30 seconds.  Remove the plate using potholders.  Let plate stand for about 1 minute.  Sprinkle with walnuts or peanuts and serve yourself!

16.  PUPPY DOG SALAD



The puppy's face is seen from the side in this salad. Put a lettuce leaf on the plate, then use the following foods:

Head: 1 canned pear half
Nose: cherry, at the narrow end of the pear
Ear: 1 prune, or a slice of marshmallow
Eye: 1 raisin
Collar: a ring of grapes or mandarin orange segments

17.  BUNNY RABBIT SALAD



Create this bunny salad on a lettuce leaf.

Body: 1 canned pear half
Nose: cherry, at narrow end of pear Eyes: 2 raisins, on pear, just above the cherry nose
Ears: 2 almonds, stuck into the pear above the eyes
Tail: a small cauliflower at the wide end of the pear half

18.  SNAKY SALAD



This snake's carrot and celery body are held together with soft cream cheese or processed cheese spread. Cut a carrot and celery stick into bite-sized chunks. Arrange the chunks on the serving plate in a curved line with a dot of cheese between the chunks to hold the snake together. Let the round end of the carrot be his head. Use raisins for eyes (held in place with cheese) and a piece of red pepper or radish for his tongue.

19.  SPIDER SALAD



Create this spider on a lettuce leaf:

Body: 1/2 tomato, rounded-side up
Eyes: 2 slices of olive or radish
Antennae: 2 thin celery sticks or pieces of green onion
Legs: 8 carrot curls (see recipe for Carrot Curls and Radish Roses in this chapter) or carrot sticks
Mouth: piece of green pepper or a raisin

20.  MOUSY SALAD



First place a lettuce leaf on the plate, then create this mouse

Body: 1 canned pear half (narrow end is the head)
Nose: small piece of cherry
Eyes: 2 currants or raisin halves
Ears: 2 marshmallow slices (easily cut with scissors)
Tail: 1 green bean

21. KID STUFF SALAD



Self-portrait?  Follow the directions below:

Head: 1 slice of hard-cooked egg
Body: peach half, rounded-side up Skirt (if it's a girl): curly lettuce leaf
Arms and legs: celery or carrot sticks
Shoes: 2 raisins (or dates if she or he has big feet!)
Eyes: 2 raisins
Buttons: 3 currants or raisins on the peach half
Mouth: a cherry-slice smile
Hair: coconut, grated cheese, or grated carrot

22.  CANDLE SALAD



Place a lettuce leaf on the plate, then make the candle in the following way:
Base of candle: pineapple ring
Candle: half banana, upright in
the pineapple ring with the cut side down
Flame: 1 dried apricot cut with scissors into the shape of a flame.
Secure on top of the candle with a toothpick

23. KITTEN SALAD



Place a lettuce leaf on the plate, then create a kitten this way:

Head: peach half, rounded-side up
Eyes: 2 raisins
Nose: 1 cherry half
Whiskers: 6 straight pretzels or thin carrot sticks
Ears: triangles of apple, banana, or green pepper

24.  APPLE WEDGIES



INGREDIENTS
1 apple
1/4 (50 ml) cup softened cream cheese
1 tbsp.  raisins (15 ml)
dash of cinnamon
brown sugar to taste, if needed

UTENSILS
bowl
wooden spoon
measuring cup and spoons
table knife
plastic wrap
sharp knife and cutting board
serving plate
50 mL 15 mL

1. Wash apple. Ask an adult to help you remove the core from the apple.
2. Put cream cheese in a small bowl and beat with wooden spoon until soft and smooth. Stir in raisins and cinnamon. Add brown sugar if desired.
3. Use a table knife to stuff the centre of the apple with the cream cheese mixture. Cover with plastic wrap and chill for 1 hour, or until cold and firm.
4. With a sharp knife, cut apple into wedges and arrange, skin side down, on a serving plate. Serve at once.

Makes 1 to 2 servings.

25.  TUNA TREATS



If tuna salad isn't your favourite, use chicken salad instead.
 

INGREDIENTS

1 can (7 oz/198 g) tuna, drained
1/3 cup      chopped celery           75 mL
2 tbsp.    sweet pickle relish      25 mL
1/3 cup      mayonnaise               75 mL
salt and pepper
4 flat-bottomed ice cream cones
4 cherry tomatoes,
radishes, or pickle slices

UTENSILS
sieve
medium mixing bowl
fork and spoon
cutting board and sharp knife
measuring cups and spoons

1. Place tuna in a sieve and rinse with cold water (this step is not necessary if the tuna is packed in water or broth rather than oil). Drain well.
2. Place drained tuna in mixing bowl and use a fork to break up the large chunks. Wash and chop celery. Add celery, relish, and mayonnaise to tuna and stir with the fork to mix well. Add salt and pepper to taste.
3. Spoon the tuna salad into the ice cream cones and top each cone with a cherry tomato, a radish (wash both first), or a pickle slice.

26.  BAG POPS



INGREDIENTS
1 package unsweetened powdered drink mix
1 cup sugar
1 small package gelatin dessert (any flavor)
2 cups boiling water
4 cups cold water

UTENSILS/MATERIALS
Small plastic sandwich bags
Twist ties
Muffin tin
Spoon
Bowl

1.  Combine drink mix, sugar, and gelatin mix in a bowl.

2.  Pour the boiling water over dry ingredients. Stir until dissolved.

3.  Add cold water. Stir well.

4.  Pour 1/3 cup liquid into each plastic bag.

5.  Seal the bags with a twist tie and stand them in muffin fins. Freeze.

These are Liberian Bag Pops, a cool treat sold from ice chests on the streets of Liberia. Roll back the plastic to eat.

27.  DRESSED POTATOES



INGREDIENTS

baking potatoes
baked potato dressings:
sour cream
grated cheese
salt and pepper
salsa
bacon bits
chives
canned chili
creamed corn

UTENSILS/MATERIALS
fork
spoons
microwave
plates

Wash and prick potatoes with fork.  Microwave on High (100%) for 10 minutes.  Dress the potatoes.
The idea here is to think of as many ways to DRESS a microwaved "baked" potato as we can!  Heaven knows we wouldn't want the poor things to go without.  Help, I need more ideas!

28.  ANTS ON A LOG



INGREDIENTS

celery
peanut butter
cream cheese
nuts
raisins

UTENSILS/MATERIALS

Sharp knife
Cutting board
Table knifes
Spoons
Plates

The old standard.  Fill celery stalks with peanut butter, others with cream cheese.  Dot with nuts or raisin (ants).  Eat the anty log.
